OATMEAL BREAD - 2 Leaves (Clotilde) - Pão Betty -

1 1/2 cups boiling water - 1 cup rolled oats - 3/4 cup honey - 3 tablespoons soft butter - 2 teaspoons salt - 1 tablespoon active dry yeast - 2 cups lukewarm water  (110 degrees) - 8 cups white flour, approximately - Butter.     Pour the boiling water over the oats and allow to stand for 30 minutes.   Add he honey, solft butter, and salt and stir.  Dissolve the yest in the lukewarm water and add to the oatmeal mixture. Beat and mix in enough of the flour to make a medium-soft dough. Turn the dough onto a floured board and knead until smoth and elastic, about 10 minutes. Place the dough in a clean, buttered bowl and turn it over to butter the top. Cover and let rise in a warm place untildoubled in bulk, about one hour. Turn tje dough out onto a board and Knead again.  Divide the dough and shap into a loaves.  Place them into well-oiled 9-bi - 5 by - 3 - inch bread pand.  Cover and let rise until doubled in bulk, about 45 minutes.  Preheat the oven to 400 degrees. Bake the loaves 5 minutos.  Then lower the oven heat, to 350 degrees and bake 40 minutos, longer or until loaves sound hollow when tapped on the bottom.  Brush the tops of the loaves with butter for a soft crust.
